Gin's Kitchen - 云吞面

What's for lunch today? 云吞面! I can't even remember the number of times we've tried to make 云吞 at home but sad to say, they are usually unsuccessful. Mr Tan prefers fried 云吞 but we can never seem to find the correct 云吞 skin for it. I decided to try making some boiled ones today too and they came out pretty good! The only thing that's missing is the chilli oil. I've tried 2 different brands but none of them tasted like the ones in the restaurants. Perhaps I should ask the restaurant for the brand that they use the next time I dine in and pray hard that they'll tell me!

Ingredients
- 200g of egg noodles
- 1 pack of wanton skin
- 250g of minced pork
- 250g of prawn meat
- 2 stalks of kailan (the only veg left in the fridge)
- some water to seal the wantons

Seasoning for pork
- 1 tablespoon of soy sauce (need to add more next time)
- 1 tablespoon of sesame oil
- 2 tablespoons of water
- 1 tablespoon of corn flour
- Pepper

Seasoning for prawn (cut each prawn into 2 - 3 pieces)
- 1 tablespoon of Knorr chicken powder
- Pepper
- 1 tablespoon of sesame oil

Seasoning for noodles
- 1 tablespoon of soy sauce
- 1 teaspoon of sesame oil
- 1 teaspoon of oyster sauce
- 1 teaspoon of fish sauce
- Chilli oil (optional)


Directions for wrapping the wantons
1. Add seasonings to pork and prawn and marinate them for at least 30 minutes
2. Mix pork and prawn together before wrapping the wantons
3. Use a teaspoon to scoop the minced pork and prawn and place them in the middle of the wanton skin
4. Dap some water around the skin and seal it

Directions for vegetables, boiled wanton and noodles
1. Add some salt to a pot of water and bring it to boil
2. Blanch the kailan in the water and remove once they are cooked
3. Add wantons to the boiling water and for about 5 minutes (they will float to the surface when they are cooked)
4. Remove wantons and set aside
5. Loosen the egg noodles on a plate
6. Add in the egg noodles into the boiling water and cook it for about 30 seconds
7. Remove the noodles and rinse it under cold running water for about 10 seconds
8. Return the noodles to the boiling water for 3 seconds and portion them onto 2 plates
9. Mix noodles with soy sauce, oyster sauce, fish sauce, sesame oil and chilli oil
10. Serve noodles with wantons, kailan and char siew immediately
