Gin's Kitchen - Steamed Prawns with Garlic

Prawns - one of my fave seafood. Whichever way you cook them, steamed, deep fried, stir-fried, I love them all!

Ingredients
- 400g of Tiger Prawns (about 10 pieces)
- 3 garlic cloves (minced)
- 4 tablespoons of Shaoxing wine
- 3 tablespoons of soy sauce
- 2 tablespoons of sesame oil
- 5 slices of ginger
- 1 stalk of spring onions, cut to 5 cm length
- Pepper

Directions
1. Line the bottom of the plate with slices of ginger and spring onions
2. Trim away the head, feelers and legs of the prawns
3. Make a cut along the length of the prawns and remove the veins
4. Place the butterflied prawns on top of the ginger and spring onions
5. Drizzle 2 tablespoons of Shaoxing wine over the prawns
6. Mix the minced garlic, 2 tablespoons of Shaoxing wine, 2 tablespoons of soy sauce. 2 tablespoons of sesame oil and pepper in a bowl
7. Scoop the garlic mixture into the cut made in Step 3
8. Steamed the prawns on high heat for 5 minutes and they are ready to be devoured!
